Musakhan

Ingredients:

  • 1 whole chicken, cut into pieces
  • 4 large onions, thinly sliced
  • 1/2 cup olive oil
  • 2 tablespoons ground sumac
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Arabic flatbread (or pita bread)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Chicken:

    • Rub the chicken pieces with sumac, cumin, salt, and pepper.
    • In a large skillet, heat olive oil and brown the chicken on both sides. Set aside.
  3. Caramelize Onions:

    • In the same skillet, add more oil if needed and sauté the thinly sliced onions until golden brown and caramelized. Add salt to taste.
  4. Assemble:

    • Place the chicken in a baking dish.
    • Spread the caramelized onions over the chicken.
  5. Bake:

    • Cover the baking dish with foil and bake in the preheated oven for about 30-40 minutes or until the chicken is cooked through.
  6. Serve:

    • Serve the Musakhan on a bed of Arabic flatbread. Drizzle with olive oil and garnish with extra sumac if desired.
